Amazing banana bread with dried plums

This was a revelation. It is the 3rd banana bread recipe I post in here (hello banana bread lovers!) but if I had to choose – this one definitely goes on top of my list!

The reason? The unconventional combination of banana flavour and dried plums. At first I thought nah, this will not work. Then, hmmmm…but what if…? And finally when I baked it and took the first bite I was like: WHY HAVEN’T I THOUGHT OF THIS BEFORE? :)
I used the base recipe for the bread from Monika’s book “Opowiadania drewnianego stołu” as I thought adding all 4 bananas to the batter as well as rolled oats is an interesting combination.

This banana bread is seriously delicious! It is moist, full of flavour and mind you – the crunchy walnuts do give it a great texture so if you decide to make this banana bread, I definitely recommend adding some walnuts (or pecan nuts will be great too!).

What more can I say if not – got and make it asap! I hope you will enjoy this recipe as much as I do :)

  1. 150g unsalted butter
  2. 1 cup of flour
  3. 1 tsp baking soda
  4. pinch of salt
  5. 2 eggs
  6. 4 very ripe bananas + 1 banana for decoration
  7. 1/2 cup brown sugar
  8. 1 tsp vanilla extract
  9. 1/2 cup rolled oats
  10. 6 dried plums (diced)
  11. handful of roughly chopped walnuts*
  1. Preheat oven to 180°C and line a loaf pan with baking paper.
  2. Melt butter and let it cool slightly. In a big bowl, mash ripe bananas and sugar with a fork. Next stir in melted butter, eggs and vanilla extract and mix well. Sift in flour, baking soda and pinch of salt and combine well.
  3. Finally, add rolled oats, diced plums and chopped walnuts (if using) and gently stir everything together.
  4. Pour the batter into your prepared bread tin. Cut the remaining banana in half (lengthwise) and arrange gently on top of the batter. Bake for about 45 to 50 minutes or until tester inserted into the centre of the cake comes out clean.
  5. Remove from the oven and cool completely on a rack (leave the banana bread in the loaf pan). When cooled remove the banana bread from the pan, slice and serve. Enjoy!
  1. *It is optional but if you do have walnuts available - it makes a great difference in texture!
