When it gets cold and rainy outside this soup is my favourite comfort food. It’s a great and super quick recipe that I keep coming back to. It is also a very flexible recipe – add a carrot or a half of courgette, replace black pepper with chili…you see what I mean? :) Be creative and enjoy!
Broccoli soup

Yields 2
Ingredients
- 2 tablespoons butter, room temperature
- 1 head fresh broccoli (ca. 500g)
- 1 onion, chopped
- Salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 4 cups chicken or vegetable stock
- 1/4 cup cream
Instructions
- In heavy medium pan melt butter. Add broccoli, onion and season with salt and pepper. Cook few minutes until onion is translucent.
- Stir in the flour and cook for a minute, until the flour reaches blonde colour.
- Add stock and bring to boil.
- Simmer uncovered until broccoli is soft (about 15 minutes). Add cream and mix well.
- Use immersion blender or pour soup into a stand blender and puree the soup.
- Season to taste with salt and pepper.
Notes
- Served best with few slices of toasted bread with herb or garlic butter. Enjoy!
