Comfort food – broccoli soup

When it gets cold and rainy outside this soup is my favourite comfort food. It’s a great and super quick recipe that I keep coming back to. It is also a very flexible recipe – add a carrot or a half of courgette, replace black pepper with chili…you see what I mean? :) Be creative and enjoy!

  1. 2 tablespoons butter, room temperature
  2. 1 head fresh broccoli (ca. 500g)
  3. 1 onion, chopped
  4. Salt and freshly ground black pepper
  5. 3 tablespoons all-purpose flour
  6. 4 cups chicken or vegetable stock
  7. 1/4 cup cream
  1. In heavy medium pan melt butter. Add broccoli, onion and season with salt and pepper. Cook few minutes until onion is translucent.
  2. Stir in the flour and cook for a minute, until the flour reaches blonde colour.
  3. Add stock and bring to boil.
  4. Simmer uncovered until broccoli is soft (about 15 minutes). Add cream and mix well.
  5. Use immersion blender or pour soup into a stand blender and puree the soup.
  6. Season to taste with salt and pepper.
  1. Served best with few slices of toasted bread with herb or garlic butter. Enjoy!

    Uwielbiam zupy-kremy i często je robię… brokułowe, porowe, cebulowe, marchewkowe, kalafiorowe… mniam :)
