Drunken pear chocolate cake

Shhh….don’t tell anyone!
This cake is so easy to make and so delicious you will want to keep this secret to yourself! :) Except for the time that you need to poach the pears it literally takes few minutes to make the batter and by the time you know it this beautiful cake will be in your oven! After that it’s just waiting impatiently before it cools down and you cut into this beauty! Trust me, it is moist, it is super tasty and it looks amazing…what more do you want? Ready? Set? Bake!

For the poached pears
  1. 3 pears, peeled with stems left on
  2. 1 bottle (750ml) dry white wine
  3. 1 cup granulated sugar
  4. 1 cup water
  5. 3 cinnamon sticks*
  6. 10 cardamom pods
For the chocolate cake
  1. 1 2/3 cups all-purpose flour
  2. 3/4 cup brown sugar
  3. 1/3 cup unsweetened cocoa powder
  4. 1 tsp baking powder
  5. 1 tsp ground cinnamon
  6. 1/2 tsp baking soda
  7. pinch of salt
  8. 1 egg
  9. 1 cup buttermilk
  10. 1/2 cup olive oil
  1. 1 tsp all-purpose flour
  2. 1 tsp unsweetened cocoa powder
  3. 1/4 tsp ground cinnamon
  1. Heat the peeled pears, white wine, sugar, water, and spices until boiling, then turn heat down to simmer. Continue to cook for 45 minutes. Gently remove pears from poaching liquid and cool them slightly.
  2. Preheat oven to 180°C. Grease a standard size loaf pan and set it aside.
  3. In a large bowl combine flour, brown sugar, cocoa powder, baking powder, 1 tsp. cinnamon, baking soda, and salt. In a medium bowl whisk together egg, buttermilk, and olive oil. Add to flour mixture and whisk everything together until smooth. Pour batter into prepared loaf pan.
  4. In a small, shallow dish combine 1 tbsp flour, 1 tbsp cocoa powder and 1/4 tsp cinnamon. Gently roll each pear in the flour mixture to lightly coat. Place pears, stem sides up, down the center of the batter (pears will be exposed at the top and that is ok as the batter will rise up around them during baking).
  5. Bake for 50 to 55 minutes or until a toothpick inserted near the center comes out clean. Remove the cake and cool in pan on a wire rack for 10 min. Lastly, remove the cake from the pan and let it cool completely.
  6. Sprinkle some icing sugar on top and enjoy!
  1. *Simply rinse the cinnamon sticks once the pears are ready and you will be able to use them again next time.
