Gluten free banana and walnut bread

I have never thought that a gluten free banana bread can be so moist and so delicious :)
I have been experimenting with some gluten free recipes lately and I must say this one is my new favourite! I also added some walnuts to this recipe as I like the extra crunch/ texture they give to each slice you eat. Once you get all the ingredients ready you only need one (!) large bowl to whisk up the dough and that’s it. It really takes 15min to make + about an hour to bake. After that you can enjoy a delicious and fragrant banana bread which at the same time is also kinda good for ya. I mean, how good is that? :) I say, give this recipe a chance and let me know how it turned out :) Enjoy!

  1. 3 medium ripe bananas + 1 banana for decoration
  2. 1/2 tsp vanilla extract
  3. 1 egg
  4. 3 Tbsp coconut oil, melted
  5. 2/4 cup brown sugar
  6. 2-3 tbsp maple syrup
  7. 3 tsp baking powder
  8. pinch of salt
  9. 1/2 tsp ground cinnamon
  10. 3/4 cup (180 ml) unsweetened almond (or dairy milk)
  11. 1/ 1/4 cup almond flour
  12. 1 1/4 cup buckwheat flour
  13. 1 1/4 cup gluten free oats
  14. 1/ 2 cup chopped walnuts (or pecan nuts)
  1. Preheat oven to 175°C and grease a loaf pan with butter and line with parchment paper (it will be easier to take it out later :) ).
  2. In a large bowl mash bananas and add all ingredients through almond milk and whisk to combine. Next, add almond and buckwheat flour as well as oats and stir. Finally, add the walnuts and gently stir to combine.
  3. Pour the batter into the tin. Cut the remaining banana lengthwise into thin slices and decorate the top, pushing it down gently.
  4. Bake for 1 hour – 1 hour 15 minutes until it feels firm and the top is golden brown.
  5. Let cool before cutting or it might be too tender to hold form. Enjoy!
  6. Store the bread in a covered container for up to a few days. Slice and freeze if you want to keep it for longer time.

    The instructions say “Next, add almond and buckwheat flour” but I do not see almond flour listed in the ingredient list.
